Comfort Meat Loaf

This old-fashioned meat loaf recipe is my all-time favorite. Nothing fancy. Just good ole' comfort food.

Ingredients

  • 2 cups chopped onion
  • 3 cloves finely chopped garlic
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped carrot
  • 2 TBSP butter
  • 2-1/2 tsp. kosher salt
  • 1-1/2 tsp. ground pepper
  • 2 tsp. worcestershire sauce
  • 1/3 cup ketchup
  • 1-1/2 pounds ground chuck
  • 3/4 pound bulk sweet, mild Italian sausage
  • 1 cup Pankow bread crumbs
  • 2 eggs large, slightly beaten

Instructions

  1. Preheat oven to 350 degrees

  2. In a large skillet over medium heat, cook onion, garlic, celery and carrot in butter for 5 minutes, stirring occasionally. Cover the skillet and cook an additional 5 minutes.

    Stir in salt, pepper, worcestershire sauce and ketchup and cook another minutes.

    Allow to cool slightly.

  3. In a large bowl, add the cooled, cooked vegetables, both meats, bread crumbs and eggs. Mix with hands until fully combined.

  4. In a shallow baking dish, form the meat mixture into a 10 x 5-inch oval loaf so the sides are not touching the dish. Spread additional ketchup over the top, if desired.

  5. Bake in oven for 1 hour or until meat thermometer inserted in center registers 155 degrees.

    Note: If mixture was refrigerated prior to baking, remove from refrigerator at least one hour before.
