This old-fashioned meat loaf recipe is my all-time favorite. Nothing fancy. Just good ole' comfort food.
Preheat oven to 350 degrees
In a large skillet over medium heat, cook onion, garlic, celery and carrot in butter for 5 minutes, stirring occasionally. Cover the skillet and cook an additional 5 minutes.
Stir in salt, pepper, worcestershire sauce and ketchup and cook another minutes.
Allow to cool slightly.
In a large bowl, add the cooled, cooked vegetables, both meats, bread crumbs and eggs. Mix with hands until fully combined.
In a shallow baking dish, form the meat mixture into a 10 x 5-inch oval loaf so the sides are not touching the dish. Spread additional ketchup over the top, if desired.
Bake in oven for 1 hour or until meat thermometer inserted in center registers 155 degrees.
Note: If mixture was refrigerated prior to baking, remove from refrigerator at least one hour before.
