Poached Chicken Breasts

This is my go-to recipe when I'm in need of cooked chicken breasts. They are so moist. I use this recipe for salads and in my Chicken Artichoke Spinach Pie.

Ingredients

  • 1 to 4 boneless chicken breasts
  • salt & pepper
  • 1 TBSP. olive oil

Instructions

  1. Pound chicken breasts to even thickness.

    Lightly salt and pepper each breast on both sides.

    Heat a sauce pan over medium-high heat. When hot, add the olive oil and swirl the pan.

    Turn the heat to medium and add the chicken breasts. Cook for 1 minute. (You are not browning them)

    Flip the chicken breasts and turn the heat to low. Cover the pan with a tight fitting lid and cook for 10 minutes. DO NOT PEEK!

    Turn off the heat. Again, DO NOT PEEK. Allow to sit for 10 - 15 minutes.
