In my book, The Essence of Shade, the main character serves Chicken Salad at Shady Lane's bakery. This recipe can be served as a salad, or piled on top of a buttery Croissant. I poach my own chicken breasts (see recipe on this site), however, you can use purchased cooked chicken. A real crowd-pleaser!
Ingredients
- 1/4 cup mayonnaise
- 1/4 cup Ranch dressing
- 1-1/2 TBSP chopped fresh dill
- 4 cups cooked chicken cut in 1/2 inch cubes See the Poached Chicken Breast recipe on this site. Use 3-4 boneless breasts
- 1 cup chopped celery
- 1 cup green or red seedless grapes, halved or quartered
- 1/4 cup rough chopped pecans
- 1 tsp. kosher salt
- 1/2 tsp. pepper
Instructions

Combine mayonnaise, Ranch dressing, and chopped dill in a bowl. Mix well to combine.
Add remaining ingredients and toss well.
